When the weather forecast calls for trouble, you turn to Bolaris. Our seasonal winter ale brewed in the style of a scotch wee-heavy. Dark, malty-sweet body, a heavy dose of maple syrup, and a touch of cinnamon and vanilla. 

Vuarnet Soleil (vwar-NAY soh-LAY) is our golden-hour tribute to those who chase the last light—whether you're hiking White Clay, kayaking Silver Lake, or just watching the sun set behind the Dash In. This Belgian Blonde is crisp and quietly complex, with a soft malt backbone and aromas of citrus, white grape, and floral spice, thanks to Nectaron and Nelson Sauvin hops. Light enough to refresh, bold enough to remember.

Porter with the unmistakable smokiness of peat. We brewed this batch will a special blend of local Delaware barley and barley smoked with peat. Peat has been used for centuries to give Scottish whiskey its distinctive flavor. It's a great beer to sip while waiting for the winter winds to user in spring rain.

A bright, dry farmhouse saison brewed with pilsner malt, wheat, and classic saison yeast. Notes of citrus and coriander lead into a crisp, effervescent finish, while a gentle addition of cranberry lends a subtle and refreshing tartness without sweetness. There’s always a ‘buzz’ when this beer is on tap. Light and refreshing wheat ale with a clean, dry finish. OBHW is brewed with over 20 lbs of local honey from Blackbird Creek bees and hopped with Galaxy and Saaz.
