Our Black IPA combines roasted German malt, local chocolate malt, and a medley of chinook, centennial, and amarillo hops for a balanced bitter and roasty brew. Black in color with the hoppy bite you’d expect from an IPA.

This dark lager started as a classic Czech recipe — smooth, malty, and balanced — but we decided to let AI take a crack at perfecting it. Using brewing data and style profiles, we ran the recipe through an AI model to fine-tune its balance of roasted malt, sweetness, and body. Old-world craft meets modern intelligence in this Czech lager refined by AI-driven precision.

Their hop bines climbed so high and wide that they engulfed the front porch and walkway challenging even the most dedicated delivery person and threatening to overtake their home…all for you!

When the weather forecast calls for trouble, you turn to Bolaris. Our seasonal winter ale brewed in the style of a scotch wee-heavy. Dark, malty-sweet body, a heavy dose of maple syrup, and a touch of cinnamon and vanilla. 

The beer we brewed for the very first time on our ‘new to us’ 1.5 bbl equipment just hours after our Eagles won their very first Super Bowl. This German ale is brewed with Vienna malt and wheat with a touch of bitterness from German Mandarina Bavaria hops.

**5 oz Holiday Pour** A golden, effervescent Belgian Tripel brewed with monastery yeast and a touch of local honey. Expressive aromas of banana, and soft spice lead into a dry, body with gentle warming alcohol. Complex, smooth, and meant to be savored.

A framboise-inspired ruby-brown ale, brewed with caramel and biscuit malts and gently soured with Philly Sour for a bright, refreshing tartness. Real raspberry brings bramble-berry fruit character, while organic vanilla beans soften the finish in cozy warmth.

Vuarnet Soleil (vwar-NAY soh-LAY) is our golden-hour tribute to those who chase the last light—whether you're hiking White Clay, kayaking Silver Lake, or just watching the sun set behind the Dash In. This Belgian Blonde is crisp and quietly complex, with a soft malt backbone and aromas of citrus, white grape, and floral spice, thanks to Nectaron and Nelson Sauvin hops. Light enough to refresh, bold enough to remember.

Brewed in collaboration with the Delaware Brewers Guild, this beer celebrates Delaware's small-but-mighty craft scene. Our version of is west-coast-ish, with local honey from Blackbird Creek Apiary and a snap of sea salt, then layered with Warrior, Simcoe, Centennial, Citra, Mosaic, and Azacca hops for waves of citrus, pine, and tropical fruit. A portion of sales will be donated to the DE Brewers Guild.
